Proper fryer management helps extend cooking-oil life, improve food quality and maintain cleaner, safer fryers. Food cooked in well-maintained oil should be crisp on the outside and light and moist on the inside.
Filter each fryer every day, preferably at the end of service. Removing food particles before they remain in the oil overnight helps slow oil deterioration.
ecoFRY’s fryer management service provides deeper filtration than a standard paper-filter process. Regular service can help extend oil life, reduce oil waste and decrease the frequency of difficult boil-out cleaning.
Use a fryer skimmer throughout the day to remove floating crumbs and food particles. Batter, breading and other food debris continue cooking in the oil, accelerating its deterioration and increasing Total Polar Materials (TPM).
Test frying oil regularly using a reliable oil-quality or TPM tester. Appearance, smell and smoke can indicate severely degraded oil, but accurate testing provides a much better basis for deciding when the oil should be replaced.

For most commercial frying applications, maintain the oil at approximately 350°F, or at the temperature recommended for the product being cooked.
Oil that is too hot breaks down more quickly. Oil that is not hot enough can produce greasy, poorly cooked food. Check and calibrate fryer thermostats regularly to ensure the displayed temperature is accurate.
Once the oil has been filtered and the fryer has cooled appropriately, cover the fryer to protect it from foreign objects and exposure to light. Filtering at the end of the day also prevents food debris from remaining in the oil overnight.
Keep the oil at the manufacturer’s recommended fill line, without exceeding the MAX mark. After adding fresh oil, allow the fryer to return to the correct cooking temperature before adding food. Cooking before the oil recovers can result in greasy food and inconsistent quality.
